Some ways to deter this behavior are Trim His Claws or use Soft Claws for Cats (it will take time to train so protect yourself) Say "Ouch" loudly and clearly when he bites and slowly remove you hand DON'T pull away it will remind him of prey trying to escape and he will clamp down harder.
